Five Ingredient Fluffy Vegan Pancakes

Okay so I rounded down, there are really six ingredients but five sounds better and I don’t consider water an ingredient.. Anyway I created this recipe because I am lazy in the morning. Especially on the weekend, all I want is a nice hot filling breakfast but without a lot of work or preparation. And since it is the weekend I don’t mind having a sweet hearty meal like these pancakes!
This recipe is super simple and quick so you can make a big batch of pancakes in minutes! Plus it will provide you with sustained energy to lounge on the couch, or workout and everything in between. It’s pretty versatile, you can add chocolate chips or fruit as well as change the flavour of the protein. You will notice in the pictures the I chose to use chocolate protein in my most recent batch, but the other on the green plate is vanilla protein. Nothing is better than piping hot coffee and fresh fluffy pancakes on a Saturday or Sunday morning. Ingredients

  • 2 cups whole wheat flour (all-purpose or pastry flour work as well)
  • 1/2 cup or 2 scoops of protein powder (I use either Vege Pro 7 Chocolate, or Genuine health Vanilla)
  • 2 Tbsp baking powder
  • 4 Tbsp maple syrup
  • 1 tsp sea salt
  • 2 cups of water
  • (Optional: chocolate chips, blueberries, strawberries, banana slices)
Directions
  1. Heat skillet or pancake griddle to medium high heat (This step is crucial because the grill must be HOT for the pancakes to really fluff up.)
  2. Mix together the dry ingredients in a bowl
  3. Add in the maple syrup and water (If the protein you choose is really dry you will need a bit more water. You want pancake batter consistency; not too thick and not too wet.)
  4. Grease the griddle/ pan with a bit of coconut oil
  5. Using 1/8 of a cup to 1/4 cup scoop the batter onto the griddle/ pan (optional step: drop in toppings if desired)
  6. When pancakes start to rise flip them and cook for another minute on the other side
